Tequila is a finely crafted spirit, regulated by the Mexican government, this regulation is similar to the laws regarding the French product of ‘Cognac’. Tequila is a powerful regional Agave distillate. Agave is not a cactus, therefore… Tequila is NOT a product of cactus. This alcoholic spirit is made from the distillation of fermented Agave leaves & the true 'heart' of the agave plant. The most sought after species of the many Agave is called the ‘Tequilana Weber’ or ‘Blue Agave’ variety. The silvery blue leaves & flavotful heart found on this plant yield a distinctive characteristic flavor, which distinguishes it from other agaves. Mescal and Pulque are spirits derived from other species of the Agave plant, however produced in a similar fashion. The agave is allowed to be grown in only five Mexican states. The states of Jalisco, and designated areas within; Guanajuato, Michoacan, Nayarit & Tamaulipas. The spirit is only allowed to be produced in the town of It is a closely regulated & fiercely protected spirit. All tequila is distilled crystal clear or 'White' also known as 'Silver' Reposado is Tequila that has been aged from two months up to 1 year. Anejo is a term designating the tequila to be aged at least 3 years, occasionally in small oak barrels.
