Tennessee Whiskey... *Tennessee Whiskey; A liquor distilled similarly to that of Bourbon Whiskey,though brewed next door in Tennessee. It is fermented with the clean crisp limestone spring waters of Tennessee, then filtered, It is then distilled in pot stills ‘in Tennessee’. Each house jealously guarding the sometimes ‘generations old’ family whiskey recipe. Here just before the barreling stage, Tennessee Whiskey undergoes a unique ‘Mellowing process’. This is what distinguishes ‘Tennessee’ from ‘Bourbon’. The added filtration of Tennessee Whiskey is so significant, that ‘by law’ there is a separate category for ‘Tennessee Whiskey’ This mellowing process is a slow filtering of the spirit over charcoal. This charcoal is produced by burning seasoned sugar maple tree wood. Over a period of ten days the spirits are filtered through this charcoal, and the end result is a unique ‘Tennessee’ smoky sweetness. Then aged in oak casks. This unique form of filtration is revealed in the extremely smooth nature and a mellow & slightly sweet flavor. Usually full bodied with a hint of smoke & caramel.
